Start with A TOUCH OF ZEN (1971). A little more sophisticated than your average kung fu but still impressive.

Going to echo a lot of sentiments here by recommending classics like Enter the Dragon, Street Fighter, Five Deadly Venoms, Five Fingers of Death, and many more. My personal taste tend to sway more towards the funky, grimier end of the kung fu spectrum, but there's so much stuff out there to start your way down the path! Many great recs here in this thread to check out!
