Is there a difference between the 4:3 and 16:9 versions? (other than widescreen/fullscreen)?

In terms of the movie itself no.

The only difference is that the widescreen version is matted from the full screen.

On the audio commentary on the Anchor Bay disc, Romero told that the original cut of Martin was 3 hours long but someone stole that print and to this day it is yet to appear.
