I have a very good home cinema setup which includes a 7.1 surround sound system. I've listened to various soundtracks on various different films and have come to the conclusion that as long as it fits the film and presents the dialogue, soundtrack, sound effects and atmospherics well, it doesn't matter if it is 1.0 mono, 2.0 mono, 2.0 stereo or even 7.1 surround -- a good soundtrack is a good soundtrack.
If you take the recent Psycho Blu-ray, I preferred the DTS-HD Master Audio Mono soundtrack to the 5.1 option in which the surrounds were dormant for 95% of the time and, when they were employed, they added nothing to the film.
