It's been awhile since I've seen a few of these but I think they all qualify. I don't guess I've seen enough that I like for a full ten, but here ya go.

I'm going to argue Heat belongs on a list. Sure there's the rivalry between cops and robbers but the whole film is framed by the meticulous planning and execution of a bank robbery. I've also included Reservoir dogs which doesn't include the actual heist but deals with the planning and aftermath....

The beauty of these lists is the interpretation...

There’s at least a couple of scenes in Heat where you see them planning a heist. Sizemore’s character buying explosives, De Niro’s purchasing blueprints. It’s definitely a heist movie, one you actually see a heist in.

One of the things it juxtaposes is the professionalism of the thieves and the cops.

Good points. In the definition I quoted, it says "we see the hero hatching a plan, putting together a crew, and then pulling off the job" and the odd thing with Heat is that the crew and plan (for the first heist) are already in place when the film begins, so most of the story is about that heist, its fallout, and then the internal pressures and ambitions within the gang, the offence of the LAPD to catch them. This forces the gang to abandon one heist and be in a position where a second goes extremely badly, with even further bloodshed than the first.

You also have the mutual respect between the criminal mastermind and the lead detective, who know (and articulate) what sacrifices they have made for their careers and only one of them can live if their paths cross during 'work hours'. It's a great film and one really feel like watching again this week.
