Actually Mardi Gras looked very good considering the materials available.

Btw Imdb lists Night of the Demon as:

Film negative format (mm/video inches)
16 mm

Cinematographic process
Spherical

Printed film format
35 mm (blow-up)

Aspect ratio
1.85 : 1

The aspect ratio confuses me a bit since there's no evidence this had a theatrical release.
Seems the first release it had was on video (full frame I guess?).

I never any take notice about what the IMDB claims a certain film's correct ratio is as it's usually wrong - It claims the ratio for CALIGULA THE UNTOLD STORY is 2.35:1 when it's clearly not.

"I just cut into "Night of the Demon". Great big-foot flick for sure. While the source was taken from a 1" master, it still looked pretty damn good. Overall, the film was a ton of fun and the quality is probably the best this film will ever look. There were 3 trailers attached, 2 of which were brand new for films called "Killpoint" and "Low Blow". The final trailer was for "The Hearse". Another awesome Code Red title added into the collection." (Mike K)

I really had low expectations going into Night of the Demon a few weeks back (seeing it for the first time), but I think this is one of the great sleepers on the Video Nasties list. You can totally skip Forest of Fear, but defo see Night of the Demon - it's grungy for sure, but strangely compelling....
